No-Cholesterol Egg Salad Sandwiches
This yolk-free sandwich filling is deceptive. It looks as if it's full of egg yolks, but it gets its rich yellow color from mustard and turmeric.

Ingredients:
- 6 eggs
- Water
- 1/4 cup fat-free, cholesterol-free mayonnaise or salad dressing
- 2 tablespoons finely chopped green onion or shallots
- 2 tablespoons finely chopped red bell pepper
- 1 tablespoon prepared mustard
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon paprika
- 1/8 teaspoon black pepper
- 6 slices whole-grain bread
- 3 lettuce leaves
Cooking Instructions:
Place eggs in a large saucepan; cover with cold water. Cover pan and bring to a boil over high heat. Remove from heat and let stand, covered, for 15 minutes. Drain and rinse with cold water.
Peel eggs and remove and discard yolks. Chop egg whites.
In a small bowl, combine egg whites, mayonnaise, green onion, bell pepper, mustard, turmeric, paprika, and black pepper. Serve immediately or cover and chill until serving time.
To serve, spread egg mixture on three slices of bread. Top with lettuce and remaining bread slices.
